The 8 GB GeForce RTX 3060 is the variant to check for before buying, because it shares its name and its entire compute specification with the 12 GB card while losing a third of the memory and a third of the bus width. Core count, clocks and therefore every TFLOPS figure on this page are identical to the 12 GB model. What differs is capacity and bandwidth, and for local inference capacity is usually the constraint that bites: 8 GB rules out models the 12 GB card holds comfortably.
